You should have put your listings on Time Away at least a few days prior to leaving on vacation.
I recommend turning on Time Away now so you don't have any other late shipments. You can use Time Away to extend the shipping time on your auctions up to 15 days. Just don't accept or make any offers when you are away.
Have you reached out to your buyer and asked if they are OK with waiting to ship on the 21st? If they say no and ask to cancel then you can cancel the sale as Buyer Requested. This is the BEST thing for your account health. Apologize profusely for your new seller mistake.
If your buyer says they want to wait then you can ship when you return HOWEVER you will get a late shipping defect on your account which is not a good thing especially since you are a new seller. This will hurt your account.
The buyer will not be automatically refunded unless they file a not received refund request when it is ONE day past the last estimated delivery date. Then after the case is open for 3 days eBay can force a refund from your account, you get a defect for case not resolved by seller which is VERY bad for your account, you don't get your sellers fees back.
