I estimated a cost to deliver within the same zip code but now I'm shipping from UT to KS. I can't be expected to pay the shipping cost especially when I have no idea where it would be purchased.

You can talk to customer service, but there isn’t anything they can do - they cannot ask the buyer to pay more, and eBay won’t pay the difference.
You are expected to complete the sale, since you set the price. Still, no one can force you to ship. If you cancel the transaction, you must select 'I am out of stock/I can't complete the transaction'.
You will get a defect for a cancelled transaction, and your buyer can leave feedback.
If your buyer has paid, you will have to fund the refund from a credit card or your bank account - whichever you have assigned as your preferred way to pay selling fees. Then eBay will release the original payment when it completes processing and send it to your bank.
