eBay took away the ability of Sellers seeing who was following them a few years ago and cited security reasons. I personally have issue with that since the CHOICE to Follow another member is just that, IT IS A CHOICE. If eBay perceived a security risk they could easily show a red banner warning as part of the Following process and let members make their own CHOICE accordingly.

I think you mean the seller's phone number. In some countries the seller is required by law to provide contact information if the seller is a business seller. Otherwise, eBay typically does not allow seller contact information in the listing, though it can be shared after a payment has been made.
Over the last several years, eBay has been moving towards not publicly displaying any buyer information anywhere on the site at all (aside from here on the community if buyers choose to post using their accounts here). In the past it was possible to see buyer usernames in the bid history while auctions were going on, but eBay found this lead to bid interference. Even displaying bidder information after an auction was over was problematic, and eBay began showing obscured buyer usernames only. As spamming of buyers became more and more prevalent, eBay has moved to no longer display buyer info publicly anywhere, and eBay is only sharing buyer info to sellers directly when a bid has been made or a purchase committed to, unless a buyer takes explicit steps to contact the seller via eBay message.
Back when eBay began allowing sellers to send offers to buyers that had items on a Watch List, many buyers posted angry missives on the community boards about what a violation of privacy that was and vowing never to use the Watch List feature again before it was explained that sellers could not see any usernames and that eBay was acting as an intermediary in the offer process to keep user identities private unless a transaction was actually entered into.

eBay does not share usernames of buyers just because a buyer put you on the buyer's Saved Seller list.
