What address is different from the label? Your return address or the buyer's address?
If it's your return address:
Be sure to update ALL of your addresses in your profile.

The next time you purchase a shipping label, on the label creation page, check to make sure that the zip code displayed for your Ship from/return address is correct. If it's not, click the Edit link and select the correct address as your default. After that, it should "stick."
If this is an international sale and you are shipping through eBay International Shipping, you ship to the US address for the hub and they forward the package to the buyer.
If this is for a buyer who wants to change the address after checkout, for seller protection, you are required to ship to the address on the payment. Assuming the member making the request for a change has the same member ID as your buyer, you should cancel the transaction and relist so the buyer can repurchase it, making sure he chooses/adds the correct address at checkout.
If the member ID is different from your buyer's, it's a scammer and you can report that to eBay using the report link in the Actions dropdown in the message.
