Changing a customer requested shipping date

I have a customer that would like there order to be shipped on a specific day outside of the ship by date. Is there a way to change the ship by date? Thank you

No, either have the buyer request the carrier hold or forward his delivery or cancel the transaction for buyer request and relist when buyer is ready.
