I sold a book yesterday and I already created and paid for the shipping label last night.

I was contacted by the buyer today that the address they selected was the wrong address to have the item delivered.

How do I change the address if I already paid for and created the shipping label?

You are required to ship it to the adress with the payment. If you change the address or ship it to a different address you lose seller protection. Cancel the label. Cancel the transaction citing problem with the buyer's address and relist it. The buyer can repurchase and change the address when they pay.

It always make me suspicious a buyer is trying to get a free item when they ask to ship it to a different address because they are shown the shipping address when they pay and they have an opportunity to edit the address before they submit the payment.
