Cancelation of an item
Hell there, i bought a KitchenAid Grain mill attachment for my stand mixer but reconsidered said purchase and canceled it out of a choice anxiety the same day, it's been three days and I have yet to get a response or anything about it

Per eBay policy, Buyers cannot cancel a transaction, they can only "request" a cancellation and the Seller has the ability to Accept the request, Decline the request or just ignore it and ship the item.
Really sorry that happened ... the date you want to keep an eye on is the original estimated delivery date. One day past that is when you can process a claim.
You are protected by the eBay Money Back Guarantee for 30 days from the latest estimated delivery date: eBay Money Back Guarantee policy
You can file a claim via the item in your Purchase History that you did not receive your item one day past the original estimated delivery date and up to 30 days after that. Follow the steps in the claim and they will lead to an eventual refund.
