buyer refunds
If I sell an expensive piece of jewelry and the buyer wants to return it, do I have to let them return it and give them a refund. I worry about stones being exchanged for fake.

Yes, you would have to refund.
The buyer could return a box of dirt, and you would have to refund.
You can report the buyer for returning something other than that ring, but eBay is powerless to get your ring or the money back from the buyer.
No returns does not mean no refunds.
Make sure you understand eBay’s Money Back Back Guarantee. It heavily favours the buyer.
I would recommend you sell 100 small, inexpensive items before listing anything over $100.00. This will allow you to understand the processes of listing, fielding questions, packaging, shipping, returns, how you get paid, payment holds… there is a lot to know.
Never list an item you can’t afford to give away.
