Buyer makes a purchase but requests a delayed shipping date. How to handle this with eBay so it does not affect my seller rating or shipping time with eBay?

You are required to ship within your stated handling time. If you don't, you'll earn a defect on your seller rating. There are two options:
The buyer can put a vacation hold on his mail until he returns, and in this case, you can ship on time. You would need to hear back from the buyer in time for this option to be viable.
You can cancel the transaction using the reason that there is a problem with the buyer's address, and then relist when he is back and ready to take delivery so he can repurchase it.
