If you mean the AI-generated listing process when creating a new listing in the mobile app, I don’t believe there is currently a simple on/off switch for it in the app.
One workaround other sellers have been using is opting into Seller Hub or Business Policies, which may return you to the more traditional listing process.

You can also start or finish the listing from a desktop browser if you prefer the regular listing form.
If you mean a different AI feature in the app, let us know which screen you are seeing, because eBay now has several different AI features and some of them do have their own off switch.
