You can use the Add notes function via the drop down menu but not before a listing is either Scheduled to go live or after it actually goes live. The notes field will be displayed on your active list but NOT visible to the public on the listing. It will also be displayed in your Sold items file. Here is a screen shot of the Seller Hub Active list and you can see the note right below the item.
You are more than welcome. If each note is unique you have to do it listing by listing BUT, if you want the same note on a group of items you can do it in bulk using the check boxes on the left of the items if they are in the Scheduled folder or live on the active list.
I use it in bulk because my notes reference the inventory lot the items are from. So for me I create say 10 listings and save them as Drafts, from the Drafts file I check them all and Resume working with them, they all open in the Bulk Editor, then I use the Start time bulk setting from the drop down menu at the top of the list and set them to go live at a specific time. Once I am done in the Bulk Editor I Submit them and they move to the Scheduled folder. I go there and use the Check all box at the top of the list then they Actions drop down menu and select Add notes - a pop up opens and I enter the note and they all get it before going live.

You can add a note that only you can see from your Active Listings page - click the 3 dots drop-down "Add/edit note"
