ADD A PERSONALISTION TEXT BOX
How would one add a text box that allows customers to provide personalisation details for their custom product?
I see no options in my listing that allow me to do this?

There's no way to add a text box, but the buyer can add a note to his payment or use the Contact link on the listing to provide the information. If the buyer doesn't contact you, you'll be able to contact the buyer using the option in the dropdown next to the transaction in your Orders list.
