You should be able to sign out of the eBay app using the My eBay icon at the bottom of the screen, then going to Settings to reveal the sign out link.

One possible option to avoid signing out and back in to switch accounts is to stay signed in to one account using the app, then sign in to the other account in a browser. You may have to disable the feature that automatically opens eBay browser links in the app.

Only one account will be able to use the app to send notifications at a time, however.
