A buyer would like to pay the extra shipping to have an item I'm selling to arrive by this Saturday.
Is it possible for the buyer to add extra shipping to have an item delivered to them by this Saturday?

The buyer can not add it. You can set up an item for him to purchase, like this -

If you are shipping usps, the only guaranteed service is express mail - check the delivery commitment at usps.com by using the calculate a price tool. Express is not always overnight.
