If the carrier scanned the package at delivery to your address, you took possession at that time. If the item was stolen after delivery, you are responsible just as you would be for anything else stolen off your property.
Contact the carrier and ask them to confirm the package was delivered to your address. If mis-delivered, they should help track it down. If it was delivered to a different address, open an item not received case. The automated process will automatically find in the seller's favor, but you can appeal and provide written confirmation from the carrier that the package was not delivered to you so that eBay can help.
To open a case, use the option next to the transaction in your Purchase History.
