What's stopping you from using a bid sniping service yourself? I've been
using the same one for 10+ years and it works very well. I usually set
it to bid 5 seconds before the end and I've won many auctions that way.

Well, this is an expensive lesson so let it be just that. Learn from it
and don't make the same mistake again. It's unfortunate that you found
out this way, but yes for an item that is over $750, you do have to have
signature confirmation.
