How do I force a buyer to use Paypal only to pay for items?

1) Where can I get a listing by item of all fees paid to eBay? I'm a part-time seller. 2) If my buy it now which is good til' cancelled doesn't sell in (a period of time) do I get charged for it? A) If I cancel it do I get charged? Thanks!
