I entered a new item to sell and did a save for later. When I returned an old item on a different form (ebay motors) was in the complete draft and my new one was not. How can I recover my new selling item and get rid of the old one that is in its place?

I don"t think you can as you can only save a certain number of drafts, once filled, a new draft will take the place of an old draft. Click on Selling, top of ebay page, then you should see your drafts, click on manage drafts and se if there is any recover old drafts or similar, I doubt it though, you may simply have to write another draft.
