Many carriers require the phone number - just in case something goes wrong with the delivery.
If you trust your seller with your name and address (not to mention your money), why worry about a phone number? Anyone can Google your address and get a picture of your house and full driving directions. (If you don't believe me, try it yourself.)
Leaving a phone number seems trivial to me, given that fact.
Just give your cell number if your home phone makes you uncomfortable.

Shipments going by UPS or FedEx require phone numbers. That is the carrier's rules, not eBay's.
